About the Author
Chef Marco Perez was born in Vipiteno, Italy, where his family operated the restaurant Helene. He has collaborated with a number of Italian chefs, including Gualtiero Marchesi. Recognized as one of Italy’s most creative cooks, Perez revisits classical Italian cuisine using innovative contemporary techniques that emphasize the quality of ingredients and an understanding of the connection between good food and good health.
